Would it be lawful for a man to marry a converted wife’s daughter from previous marriage?

It would be absolutely unlawful for them to contract marriage. Irrespective of the fact, that the daughter remained a non-Muslim or embraced Islam, she has become the person’s Mahram, due to his marriage with her mother.
